Sage Turkey Sausage

Ingredients


1 pound organic ground turkey breast

1 apple, coarsely chopped

3 Tablespoons finely minced red onion

1 Tablespoon dried sage

1/2 teaspoon dried thyme

3 Tablespoons extra virgin olive oil, divided

1/2 teaspoon sea salt

1/2 teaspoon ground black pepper


Directions

  1. In a large bowl, mix all ingredients, setting aside 1 T olive oil.

  2. Make eight patties from the mixture

  3. Heat a nonstick skillet over medium heat. Add 1 T olive oil to the pan.

  4. Brown the patties for 3-4 minutes on each side, until firm to the touch.

  5. Store leftovers in an airtight glass container in refrigerator up to 3 days.

**inspired by the Institute for Functional Medicine. I like to freeze these in pairs and pull from the freezer in batches. Serving size: 2 patties.
