This savory scramble is a perfect vegetarian breakfast option. You can get create with sides of avocado, fresh fruit, or an English muffin.
**Can be mixed the night before for a quicker morning prep.
14 oz extra firm or firm tofu
1/3 c finely diced onion
1/3 c chopped green pepper
1/4 c nutritional yeast flakes
1/2 tsp dried thyme
1/2 tsp ground turmeric
1/4 tsp coarse salt
1/4 tsp freshly ground black pepper
Drain the water away from the block of tofu. I usually give the block a little squeeze to remove excess water. Crumble the tofu into a mixing bowl. Mash it with your hands until it's very crumbly without being mushy.
To the tofu crumbles, add nutritional yeast flakes through black pepper (the remainder of the ingredients and mix well. You can cover and refrigerate for the next day at this point.
Heat about 1 Tablespoon olive oil in a medium sized skillet over medium-low heat. Add onion and green pepper and saute until the onion is transparent (about 3-6 minutes).
To the skillet, then add the tofu mixture. Cook the mixture for 5-10 minutes, stirring occasionally, until heated through and lightly browned. Serve.
